1. Traditional vegetable soup

Among the soups selected by us, we could not miss the classic vegetable soup that our grandmothers gave us to warm our hearts and bodies every winter.

You can make a traditional vegetable soup using leftovers from the rest of your meals.

To prepare it, you can use all the vegetables that happen to be in your home. However, we suggest using the following ingredients:



  • 1 garlic
  • 2 carrots
  • 1 large onion
  • 1/2 red pepper
  • 1/2 green pepper
  • 2 stalks of celery
  • 1 stalk (flower) of broccoli
  • Parsley, bay leaf, paprika, salt and pepper (to taste)
  • Water
  • Oil


  1. Wash vegetables thoroughly , peel them and dice them.
  2. Pour a little olive oil into the pan, sauté the vegetables on it and add a little salt to them. Stir everything regularly with a wooden spoon so that nothing sticks to the pot.
  3. Set the pot off the burner and add the peppers to it, stirring constantly so that all the vegetables pass their taste. You need to remove the pot from the burner so that the peppers do not burn and turn bitter.
  4. Add the remaining spices and mix again.
  5. Pour the vegetables with water and put on a low heat to simmer until soft. Season to taste.

Note: If the stock is too diluted and you would prefer the soup to be thicker, blend some of the vegetables (without water) and add them to the soup.

2. Indian sambar soup

Sambar soup is a typical Indian dish and has many different types of vegetables. We have included our proposal below. Remember, however, that you can always add vegetables that you like or those that you have at home. It will definitely be delicious!

Indian sambar soup consists of vegetables combined with classic Indian spices.

Note that you will need a lot of ingredients to make this dish. Therefore, we recommend preparing it for holidays or special events. When you do it, you will surely surprise everyone!


  • 1 onion, cut into julienn strips
  • 3 pumpkin slices
  • 1 medium tomato, chopped
  • 2 carrots
  • 12 green beans
  • 1 tablespoon of coriander seeds
  • 1 teaspoon of cumin
  • 2 red peppers
  • 2 tablespoons of oil
  • 1 scoop of curry
  • 1/2 teaspoon of mustard seeds
  • 1 tablespoon tamarind paste
  • 1/4 cup of cilantro
  • 1/8 teaspoon turmeric
  • Salt (to taste)


  1. Wash the vegetables, peel them if necessary, and dice them. Set them aside.
  2. Fry the peppers. When they are fried, add the coriander and half a teaspoon of cumin. Fry it for a minute, then remove from heat. Set aside.
  3. Pour five glasses of water into the pot and heat them up. Add the chopped vegetables and cook them until they are tender. Thanks to this, you will get a rich decoction.
  4. When the broth is hot, remove the ladle and dip it in the tamarind sauce.
  5. Then add the turmeric, coriander, and paprika mix (you can remove the seeds), and finally the tamarind.
  6. Fry the mustard seeds in a frying pan with salt and the other half of a teaspoon of cumin. Then add the curry leaves, and when they are crunchy, put the pan off the heat and toss the spices into the soup.
  7. Taste the whole thing and season to taste if necessary.

3. Vegetable soup with chickpeas

Here is the recipe for the most nutritious vegetable soup of today’s article, with chickpeas.

Don’t limit yourself to vegetables alone. You can also add any type of legume to the soup.

You can add legumes and vegetables that you like or the ones you already have at home.



  • 200 grams of chickpeas, canned or cooked
  • 2 carrots
  • 1 see
  • 1 medium zucchini
  • Extra virgin olive oil
  • Salt and pepper (to taste)


  1. If the chickpeas are not cooked, cook them first before adding the other vegetables.
  2. Wash the vegetables thoroughly, peel them and dice them.
  3. Add a tablespoon of olive oil to the pan. Then add chopped vegetables to it and sauté it.
  4. When they are golden, pour water over them and add chickpeas to them.
  5. Throw in the cumin, salt and pepper. Simmer everything for about 20 minutes or until the vegetables are tender.

4. Vegetable soup with noodles

This soup is extremely versatile.

  • 150 grams of pasta
  • 2 tomatoes
  • 1 spring onion
  • 1 large potato or 2 medium potatoes
  • 2 carrots
  • 1 liter of water
  • Salt and pepper (to taste)
  • Optional: one tablespoon of cilantro


  • Wash all vegetables, peel them and dice them.
  • Boil a liter of water and add spring onions and carrots. Simmer for 10 minutes.
  • Add potatoes and pasta.
  • Fry the potatoes in a pan. When they are cooked, add them to the soup.
  • Add the cilantro and season the soup to taste.
  • When the pasta and vegetables are cooked, you can serve the soup.
